Pasteurized liquid egg melange is a semi-liquid egg mass of yellow or orange color, which is in demand among manufacturers of culinary, bakery, sausage and other types of food products, including sauces. Its main difference from ordinary eggs is due to the convenience and safety of use, both in domestic and industrial conditions, as well as ease of transportation, since the egg product is delivered without shells, pellicle or any other impurities and has a minimal risk of cross-contamination.
